Our goal is to create a network of Professional Chefs in the world; a Professional Association where Cooks, Chefs and Junior Chefs can meet to compare their ideas and passions, discover new raw materials, new companies of excellence, new technologies.
Through the Events and Congresses organized, Professional Chefs and Chefs, and Junior Chefs will be able to deal with WORLD AIC, with Partner Companies, with colleagues, in days of conviviality, aggregation and comparison, receiving information and training dedicated exclusively to improving the Knowledge and Expertise.
AIC supports the entire category in front of organizations and institutions, aimed at improving the professional working quality of all members.
WORLD AIC safeguards the quality of Italian cuisine, of Cooks and Chefs. WORLD AIC is committed to protecting the restaurant scene and the entire Italian food and wine sector.
All our chefs will be able to participate in our information and training events, meet new work colleagues to start a new adventure.
The Citadel of Taste
Associazione Italiana Cuochi has created a national event, which will be repeated every year in all the countries of the world where the World AIC Delegations will be present. The "Citadel of Taste" will host the regions of Italy, with the participation of the AIC regional and provincial delegations. Each region will delight us with the presence of companies and products that belong to the local and regional food and wine sector.
A kermesse that will see the best products of excellence linked to the territory parade. The "Citadel of Taste" will be built in 4 days from Saturday to Tuesday and will be open to all the public. The "Citadel of Taste" will open its doors for 4 days, from 09 in the morning to 18 in the evening, where tourists and residents will be able to visit the stands and learn about Italy's "food and wine treasures".
The project wants to see the realization of other editions, becoming a point of reference for all of Italy and in the world. During the Citadel, the regions will also compete in a "Culinary Contest", competing with dishes from their own region.
This year the first edition will be held in Italy
In Tuscany and the participation of about 200 chefs is expected, and 100 exhibitors from all over Italy with friends, relatives and companions, who will have to find hospitality and refreshment at Tuscan hotels and restaurants. An influx of tourists and onlookers eager to attend should also be taken into consideration.
The Kermesse will be resumed and will have three special dedicated episodes of approximately 30 minutes and two weekly reruns. The format will be distributed on national channels and in on-demand streaming. They will be broadcast on digital terrestrial Canale Italia, SKY|CH913 and on the new SmartTV platform that will be launched in May 2023 JuliusPlus.

WORLD AIC NATIONAL EVENTS
WORLD AIC events are held monthly involving: Cooks, Chefs, Junior Chefs, Food Bloggers and Companies.
The events are guided tours of the companies, which tell their stories and make their products known to those working in the sector.
Other events involve Chefs in training days.
All the events contribute to putting companies in synergy with those involved in the food and wine sector.
